Ingredients

1 1/2 cups almond flour

2 scoops Unflavored Prime Protein

1 cup spinach, roughly chopped

4 oz feta cheese, cubed

1 cup sun-dried tomatoes, roughly chopped

1/4 cup black olives, roughly chopped

2 tbsp ground flaxseed

1 tbsp dried oregano
-
1/4 tsp salt and black pepper

1 tsp baking powder

2 eggs

1/3 cup olive oil
Instructions

Preheat oven to 350°F and line a muffin pan with parchment paper or lightly spray a silicone muffin pan with avocado oil.

In a large bowl, combine all dry ingredients.

Whisk olive oil into the eggs, then pour into the dry ingredients and mix until evenly combined.

Spoon batter evenly into the muffin pan (makes about 6 muffins).

Bake for 30 minutes, or until fully set and golden brown.
