Protein Cranberry Walnut Muffins

These Protein Cranberry Walnut Muffins are hearty, naturally sweet, and packed with protein. Perfect for breakfast, snacks, or post-workout fuel, they’re full of wholesome ingredients like oats, apples, dates, and walnuts.

Ingredients

  • 1 cup gluten-free flour

  • 1/2 cup Vanilla or Unflavored Prime Protein

  • 1 cup quick-cook oats

  • 1 tbsp baking powder

  • 1 tsp cinnamon

  • 1/4 tsp nutmeg

  • 1/4 tsp sea salt

  • 1 cup milk or dairy alternative

  • 1 egg

  • 1/4 cup olive oil

  • 2 tbsp maple syrup

  • 2 tsp vanilla

  • 1 large apple, diced

  • 6 dates, diced

  • 1 flax egg (1 tbsp flax mixed with 3 tsp water)

  • 1/2 cup cranberries, leave whole

  • 1/2 cup walnuts, chopped

Instructions

  1. Preheat oven to 375°F and butter muffin tins.

  2. In a large bowl, combine all dry ingredients.

  3. In a small bowl, combine all wet ingredients.

  4. Mix the wet ingredients into the dry ingredients.

  5. Stir in the apple, dates, cranberries, and walnuts.

  6. Spoon the batter into the prepared muffin tins.

  7. Bake for 25 minutes or until golden brown.

  8. Cool for 5 minutes, then transfer to a cooling rack.

Notes

Chill time: 30 minutes
These muffins are great warm or at room temperature and make a convenient, protein-packed snack for busy mornings or on-the-go fuel.
