These carrot cake bars are the perfect sweet treat loaded with real food ingredients and protein from clean protein powder.
Dry Ingredients

1 1/2 cup almond flour
- 2 scoops Equip Vanilla Beef Protein Powder
- 1/2 tsp salt
- 2 tsp cinnamon
Wet Ingredients
- 1/2 cup cashew butter
- 1/3 cup applesauce
- 2 tbsp maple syrup
- 1 cup grated carrots, liquid squeezed out
- 1/2 cup raisins
- 1/2 cup chopped walnuts
Cashew Frosting Ingredients
- 1 cup raw cashews, soaked
- 1/2 cup non-dairy yogurt
- 1 tbsp lemon juice
- 1-2 tsp maple syrup (depending on desired sweetness)

1 tsp vanilla
Instructions:

Soak cashews in boiling water for at least an hour.

Preheat oven to 350F.

In a large mixing bowl, combine almond flour, vanilla equip, salt and cinnamon. Stir together.
- In another mixing bowl, combine cashew butter, applesauce, maple syrup and vanilla. Mix well.
- Add in carrots, raisins and walnuts and mix well.
- Pour wet ingredients into dry ingredients and stir until everything is combined.
- Prepare a baking dish (I used 8x6) with parchment paper and a little oil.
- Transfer batter into baking dish and spread evenly.
- Bake for ~25-30 minutes or until edges are golden.
- While the carrot cake bars are cooling, make the frosting.
In a blender, combine soaked (and drained) cashews, yogurt, lemon juice, maple syrup and vanilla. Blend until smooth.
- Spread on cooled carrot cake bars.
- Slice and enjoy!
- Keep extras in the fridge.
