Protein Carrot Cake Bars

These carrot cake bars are the perfect sweet treat loaded with real food ingredients and protein from clean protein powder.

 

Dry Ingredients

  • 1 1/2 cup almond flour

  • 2 scoops Equip Vanilla Beef Protein Powder
  • 1/2 tsp salt
  • 2 tsp cinnamon


Wet Ingredients

  • 1/2 cup cashew butter

  • 1/3 cup applesauce

  • 2 tbsp maple syrup

  • 1 cup grated carrots, liquid squeezed out

  • 1/2 cup raisins

  • 1/2 cup chopped walnuts

 

Cashew Frosting Ingredients

  • 1 cup raw cashews, soaked

  • 1/2 cup non-dairy yogurt

  • 1 tbsp lemon juice

  • 1-2 tsp maple syrup (depending on desired sweetness)

  • 1 tsp vanilla

 

Instructions:

  1. Soak cashews in boiling water for at least an hour.

  2. Preheat oven to 350F.

  3. In a large mixing bowl, combine almond flour, vanilla equip, salt and cinnamon. Stir together.

  4. In another mixing bowl, combine cashew butter, applesauce, maple syrup and vanilla. Mix well.
  5. Add in carrots, raisins and walnuts and mix well.
  6. Pour wet ingredients into dry ingredients and stir until everything is combined.
  7. Prepare a baking dish (I used 8x6) with parchment paper and a little oil.
  8. Transfer batter into baking dish and spread evenly.
  9. Bake for ~25-30 minutes or until edges are golden.
  10. While the carrot cake bars are cooling, make the frosting.
    In a blender, combine soaked (and drained) cashews, yogurt, lemon juice, maple syrup and vanilla. Blend until smooth.
  11. Spread on cooled carrot cake bars.
  12. Slice and enjoy!
  13. Keep extras in the fridge.
