Up your brunch game with these protein infused grain-free waffles smothered in a bonus blueberry collagen jam!

Ingredients:
Protein Waffles (makes 4 servings):
- ½ cup cassava flour
- ¼ cup coconut flour
- 2 scoops Equip collagen powder
- 1 scoop Equip clean protein powder
- 1 ½ tsp Ceylon cinnamon
- 1 tsp baking powder
- ¼ tsp sea salt
- 3 pasture-raised eggs
- 1 cup milk of choice
- 3 tbsp butter - melted
- 2 tbsp maple syrup
- 2 tsp vanilla
- ½ tsp sea salt
Collagen Jam (makes 4 servings):
- 1 ½ cups blueberries
- 1 scoop Equip collagen
- 1 tbsp maple syrup
- Juice of 1 lemon
- Pinch sea salt
Instructions:
First, prepare the collagen jam by placing a small pot on medium heat and adding in the blueberries.
Once it begins to bubble, add in the remaining ingredients and mix to combine. Let simmer for 2-3 minutes and then take off the heat and let cool in the fridge.
For the waffles, add all of the dry ingredients into a large bowl and mix to combine. Add in the remaining ingredients and whisk until no lumps remain.
Let the batter thicken while you preheat your waffle iron on medium heat. Lightly grease and scoop in the batter and let cool until cooked through and golden brown.
Top with the collagen jam, your other favorite toppings, and enjoy!
Store extra waffles/jam in the fridge for up to 10 days or the freezer for six months.
